Banana & apricot breakfast bars


Makes 8 - 239 calories, 36g carbs, 10g fat

Ingredients
40g oats
200g berry granola
4 pitted dates
35g dried apricots
2 small bananas
20g pine nuts
60ml skimmed milk
5 squares dark chocolate

1. Blend bananas, dates and apricots (leave some chunks).
2. Combine with dry ingredients and mix in the milk.
3. Bake in the oven on a medium heat until golden brown.
4. Optional - once cooled, spread melted dark chocolate on the top and set in the fridge.

Food Diary #1

Breakfast
 Scramled eggs with tomato sauce, cottage cheese & tiger bread.

Lunch
Chicken ciabatta roll with chicken & feta cheese salad.

Dinner
Sweet potato & tuna burger with feta cheese, and sweet potato fries.

Snacks
I blended a banana with a bit of milk to make ice cream... it was sooo nice! I also had malteasers but I didn't take a photo of them oops.
